Haggis used to be the ultimate camp food, you'd just carry it around with you.
However, depending on how you're camping (are you actually on the move with hiking/canoeing/etc. or static) it can change.
I'm generally content with oats and a bit of brown sugar or maple syrup. At home I love it with blueberries, but I'd find it hard to keep the berries fresh unless it was dried or something.

I mostly hike and my cooking setup is a pot to boil water and a pan where I cook my food, so not much room for anything fancy, that's why I was thinking about some sort of soup or stew with oats because of the nutrients and cals.

Make a simple pottage with it, whip up a few cups of chicken/beef broth, get it boiling with sliced onions, carrots, garlic, and then add inn the raw meat (most likely chicken) to cook, take off the heat throw in the shitty instant oats and wait a few minutes.
Voila!
Actually doesn't taste too bad can be pretty strong though.
