How do I learn to use spices correctly? There's often around 4-8 different spices in Indian dishes but when I add them based on just my gut feeling the food ends up tasting unimpressive and having this "generic" spice flavor, like mixing all the different colors together to make brown.

Most recipes call for whole spice that you toast and then grind by hand, and although it often yields a "better tasting" dish, I find it to be a PIA and not worth the extra effort outside of special occasions, it's sufficient to toast ground spices in the pan. The purpose of this is to release their oils and make them more fragrant. Ground spices also get stale over time, throw out anything that's been in the cupboard for ages and spring for new stuff. Finally, cook. Use them. Mix up your own garam masala, make some of the dishes I linked to here>>8247188, point being that if you don't know what the particular blend smells or tastes like your not going to get there. The neat thing about Indian food to learn to use spices is that when you get a grasp of say, how much cinnamon is too much, you can branch out into other cuisines like North African, ME, Caribbean, SE Asian, etc. with little effort.

It's funny you call this "poo food," because literally everytime I have curry my stomach ranges from slightly unsettled to my toilet is begging for mercy.

No other type of food bothers me, so not really sure what it is. I read the spices can irritate the lining of the stomach, but, I eat spicy food often.

I.e Marinating the meat, then the sauce and then the dish tastes different than adding spices to the final dish.
