I made some rice earlier today and it's been around 3 hours. I know it isn't day old rice, but I'm fucking hungry.
If I stir-fried it now, will it be as good as day-old rice?

As long as you didn't overcook it you're good.
If it's overcooked it's gonna stick to your wok or pan no matter what.
The whole overnight thing is more of a fool-proof tip.

I cooked the rice 3 hours ago. It really isn't leftover rice, I cooked it to make fried rice with in the future. I haven't eaten once today

Heat wok/pan, oil, raw meat, stir, oil, rice (not fresh), egg, soy sauce, stir until there's no longer a sticky mess, add vegetables, stir 1 - 2 minutes, done.
The whole thing should only take five minutes.
Doesn't have to be a lot of oil, doesn't have to be a lot of soy sauce.
If you actually were hungry you'd just eat the rice

You just need it to be a little dry, you can spread it over a baking sheet and toast it at like 250 for a few minutes to replicate the effect, more or less. Works better in a convection oven.

dont bother drying it, use a bit more oil and crisp it up, with egg,sesame oil,fish sauce soysauce added later.
this wont produce singular perfectly coated and seperated grains, rather a crust on the bottom and a gooey/sticky center.
