Poaching in fat is awesome. Since you do it at such a low temp the egg just sits at the bottom of a still pan and you can literally watch it cook to the perfect doneness.

Absolutely. If you drain off the loose white before you put it in the oil it won't even leave whispy white egg ghosts floating around. I first discovered it one day when I was experimenting making chicharrones. Before the oil got hot I decided to try cooking an egg in it. Best idea ever.
