It's really not that hard. Find an animal liver you like (be it cow liver, chicken, or duck), throw it into a pot with some seasonings and use a handheld mincer to puree it over a hot stove. Put it into some mason jars and enjoy.

I've made this recipe several times (from the /ck/ challenge several years ago) and it's the tits. I used duck livers and trimmed duck breast the second time, and it was even better. It's more like a terrine than just pate, though.

This is the recipe I usually use, it's very tasty and reliable. I've tried other good recipes too, but this is the one I use most. It's by Jacques Pepin, so you can't really go wrong with it.
