Only works when you simmer with something fatty like whole chicken thighs.

I left these covered in a skillet for 30 mins, low heat, in a bath of cheap chardonnay and lemon juice.
Would've turned out crispy had I chucked them in the oven instead, but the damn thing was broken.

last thing i made with alcohol was coq au vin, it was fantastic. probably my favorite way to cook chicken.

I like to simmer whitefish in white wine, butter, lemon juice, and capers.

I'll do tough red meat like oxtail in red wine and beef broth. I'll brown the meat first, them cook down some onions, add the meat plus a bunch of cut up root vegetables, and let that do its own thing on the stove on low for a few hours.

Beer can chicken on the grill is good, I'll also marinade sausages in beer
