Having an argument with one of my buds and this just seems disgusting — and ridulous, too! Reminds me of the 'activated almonds;' he says you're supposed to do this. I said at least put plastic wrap over it, he said 'but it needs to breathe.'

Idk, I suppose the butter may go rancid if it sits out for long enough. It is fat though, and due to its molecular structure, it won't rot like meat or vegetables will if it sits out. It is why preservation techniques like confit work (though I believe confit is canned)

It's normal and desirable to leave butter out at room temperature if you're going to use it all up within a week. Usually I'll leave out one stick and keep the rest in tge fridge. She should cover it though.

It will be fine for a week or two, scrape off the top layer if it gets nasty. People eat 2000 year old butter, you'll be fine.
i leave a few ounces out on the counter for bread
it gets replaced every week or so
i owuldn't leave a whole stick out all the time
