Like 7 years ago I made a thread here detailing how to make mexican pickled jalapeƱos, carrots, onions, and cauliflower. I made something like 4 gallons of the shit and my family went crazy over them. People were coming by to take tons home. Canned versions are 7/10 at best, and ones I've tried at other resteraunts are 6-8/10 at best. Mine were the best I've ever had. Man, if I could go back in time I'd give myself a hand job. Shit, I might even do that now

It's just a matter of poaching everything in oil and pickling spices and dumping it in vinegar. Don't know why mine came out so much better but probably because I used a ton of garlic and other places and companies don't use much if any garlic since it turns blue, green or purple

pretty much same story. I made chile en escabeche many times and friends would come by and we devour a few gallons in a night. Most often just eat it by itself or on saltines. If tacos were made that night there wouldnt be anything left in a matter of an hour between 2-4 people.

These were my jam for a long time. That is until they changed the recipe or something, whatever I bought yesterday with a different barrel design tasted like garbage. It tasted exactly like those vomit-inducing Utz balls.

What happened.

If I want to go next level, I do quail eggs and toss a julienned red onion in the jar too. I could honestly sit on the couch with the whole jar and a spoon and polish it all off like a 5 year old in his pj's watching Saturday morning cartoons.

I would dump the liquid out into a saucepan and heat it up just a little, then pour it back into the jar over the peeled, boiled eggs. IMO, it soaks into the eggs easier that way but isn't absolutely necessary

Just bought a jar of pickles intending to snack on one, at 1/3 without noticing.

Also, any bowl of mixed nuts in general is deadly. My favourite combo is peanuts, macadamia and cashew. Scorched almonds/peanuts/etc are it's sweet evil tin.

Herr's cheesy poofs or curls whatever they are, are way better than the utz brand ones of those also. I have never seen their cheese balls yet to try any.
