orange chicken, crispy chicken in chili sauce,
chicken or beef satay (kabobs), beef chop suey, beef w/ cashew nuts & veg,

Avoid crispy noodles, they're disappointing.

I like black bean sauce dishes. Shrimp especially. If they can do it spicy, all the better.

Just get beef with broccoli on white rice, as for more sauce. As a chink I can't eat any other rice other than white (with the exception of actual legit fried rice in authentic Chinese restaurants).

The only Chinese place I eat at is called Panda Express. I like their orange chicken the most. Other dishes taste okay but somewhat taste bland.

"Hong Kong style" roast pork, lol. There are several Hong Kong roasted pork dishes, and it would surprise me if that restaurant served any of them.

OP it's a watered-down unauthentic menu designed specifically for laowai who know jack shit about Chinese food like you. Pick whatever looks good based on your personal tastes and go with it. The most exotic thing on that menu is black bean sauce.
