Most importantly the price is pretty fucking high for veggies, I pay less for fresh ones (I'm not in the US though).

Not really, since the layers go from outside to in. Obviously the inner layers aren't spherical, but the difference is still negligible if you're dicing it finely anyway. If I need it super fine, I'll just use a cheese grater or just cross chop if it isn't immediately to hand.
