How to make good, home mad mac'n' cheese

boiled elbow pasta
cabot cheddar
heavy cream
hot water
>toppings
roasted garlic cloves
bacon (the real thick chunky shit all nice and seared, none of that thin "american bacon" crap)
crumbled croutons
diced green onion
don't know the proportions off the top of my head, usually just eyeball it until I get the consistency I like. Also fun to layer it and do a bake with crispy fried onions on the top.
16 oz medium shells
the tall skinny carton of half and half
16 oz 3 cheddar blend
butter
salt
pepper
paprika
kielbasa
cook the shells till al dente
thin layer of shells in your baking pan
salt, pepper, and paprika on top
tiny butter cubes on top of that
poke some thin sliced kielbasa in between the shells
sprinkle some cheese on all that
repeat these layers until your pan is full
pour half and half over all this till it raises to be level with the top of the pasta
add more cheese on top
bake at 400 for 45 minutes
tastes great, obviously not the best given how few ingredients, but then again I don't want to be buying 3 separate cheeses just to make some mac

Instead of bacon use pancetta
boil macaroni
make a bechamel, add cheese and red pepper
add macaroni to cheesy bechamel
put in baking pan
add breadcrumbs
bake
you can add whatever other shit you want
