I need some decent recipes for scrambled eggs; specifically, measurements.

I can make these things, and understand I can add basically anything I want, but no matter how much of anything I DO add, it still tastes completely bland.

Maybe I'm just used to the eggs I used to get from my abuelos. My abuelo raises chickens and I used to get fresh free-range eggs from them all the time. They've stopped producing recently and I had to go back to store-bought.

Anyway, any help is appreciated.

Measurements? Well, that totally depends on how many eggs you're using.
You wrote a nice little story there about how you used to get fresh eggs, but that doesn't really help.

i just whip together 2 or 3 eggs and eyeball some milk. after i cook them i sprinkle on a little salt and pepper, then splash on a healthy dose of cholula. i eat it with toast, black coffee, and ice water. 8/10 good breakfast.

Usually I scramble eggs in about a tablespoon of butter, maybe a little olive oil as well if I have more than 4 eggs.

My Go-To (I eat eggs daily usually for lunch or dinner) is a bit of salt, bit of peppa, and a shake-a shake-a cayenne pepper.

You probably just need to add a bit more salt, I admit even I fuck it up and think I'm adding too much and end up not adding enough.

heat some fat
fry up some green peppers in the fat
in the mean time beat the eggs in a bowl, add some crushed feta cheese to the mixture and then some sweet red pepper(spice), black pepper and a little salt (the cheese is salty enough)
then add the eggs to the pan and fry until they're at the constistency you want

My wife turns heat on high. Dumps a few eggs in there, lets them sit until they are burned to the pan but it's okay because it's cast iron and that is how you cook eggs. Once they are charred and stuck to the pan, dump in way too much pepper, salt and mayo. Try to mix the charred pieces of egg around and scrape it onto a plate with a metal spoon. Then add white bunny bread that was in the oven with the oven off half the time and try to spread 2 table spoons of hard, cold butter onto it and put that on the plate. From my experience the taste of the creme fraiche is pretty noticeable in the final product so I would say yes. Sour cream would achieve the same cooling affect but it would taste pretty different.

Can be worth doing if you want fluffy, fully cooked scrambled eggs. Absolutely not if you want creamy, French style scrambled eggs, you'd just be watering down the richness.

Try it with half a cup of crumbled feta per two eggs (I use large eggs so bear that in mind), pepper to taste, maybe some chives if you can get it fresh, fry them with butter rather than oil, if you're looking for some kick I'd suggest maybe a bit of Worcester sauce rather than hot sauces, or some decent balsamic

The feta gives it a slighty different texture, and a lovely flavour combined with the pepper. It's my go-to brekkie
