I had once been served a steak tartare which turned out to be a raw burger.

The burger itself looks fine. The technique he used to pretty much put the sauce inside the burger is fine with me. It's not different from people stuffing it with cheese and/or jalapenos with the exception that the sauce is going to distribute better inside the meat. I think the molding everything into a circle is unnecessary, but aesthetics I suppose. I would eat that burger and probably enjoy it too. That being said I wouldn't pay a dime over $10 for it and I just know that it's probably sold for a lot higher.
