>>thinking you can effectivley cook in a pan without oil

Oil isn't just for non-stick properties. It fills the tiny gaps between the food and the surface of the pan thereby ensuring proper heat transfer to the food. Cooking in a pan without oil is going to generate crappy results. If you want to cook oil-free then you shouldn't be using the pan at all. If you want to go oil-less then use a grill, broiler, or roast in the oven.
>>
>>8196805
Whatever you say, Donut.
>>
>>8196831
This, if you don't want to cook with oil use a charcoal grill. But even then an oil marinade can be good on some foods. Also some oils are quite healthy but energy heavy

>>8196831
This. I was hoping someone would say it before I had to.

A proper pan shall be properly seasoned cast fucking iron, you Visigoth

Non stick coatings are for people who couldn't season/oil a pan to save their fucking lives.
>>
>>8197378
If you are doing a seared meat/fish dish sure you do.

You sear the outsides then bake it in the oven to finish it.

>cast iron neckbeards

i can tell you don't cook anything besides a steak on the weekends in your 50 dollar griswold
>>
>>8197450
Have a BBQ for steak except when its raining here which is now until April

Hmm, lets see
Fried eggs and bacon
Pancakes, crepes, green curry chicken (single pan dish except for the rice)
Grilled cheese.
Fried/poached fish, stir fried prawns
>>
>>8197464

if you can fit everything you cook onto one post

you don't cook LMAO brehhhhhh

if you actually cooked you'd see the reason for non-stick
>>
>>8197450
pan was $20 bucks on discount
>>
>>8197468
The coating ALWAYS wears off, never fails.
Son, we live in a world that has stoves, and those stoves have to be used by men with cast iron skillets. Who's gonna do it? You? You, Lieutenant Weinberg? I have a greater responsibility than you can possibly fathom. You weep for this crappy pan, and you curse us cooks. You have that luxury. You have the luxury of not knowing what I know -- that tossing that shitty pan, while tragic, probably saved stomachs; and my existence, while grotesque and incomprehensible to you, gets people decent meals
You don't want the truth because deep down in places you don't talk about at parties, you want me at that stove -- you need me at that stove.
We use words like "seasoning," "spices" and "temperature." We use these words as the backbone of a life spent defending something. You use them as a punch line.
I have neither the time nor the inclination to explain myself to a man who rises and sleeps under the blanket of the very freedom that I provide and then questions the manner in which I provide it.

I would rather that you just said "thank you" and went on your way. Otherwise, I suggest you pick up a cast iron pan and learn to cook. Either way, I don't give a DAMN what you think you're entitled to!

Did you toss out that non-stick pan?

I really don't think this is the time...

DID YOU TOSS OUT THAT NON-STICK PAN?

YOU'RE GOD DAMN RIGHT, I DID!

All kidding aside, unless you put it in a blast furnace, you can easily re-season it.

Once the coating are gone, non-stick pan is garbage

what in the fuck are you cooking if it doesn't let out at least a bit of liquid in the cooking process? rice cakes?
fuck off with your pseudo-science.
>>
>>8199836

Juices from food don't work as well for this purpose as oil does. Juices in the food are aqueous. Water boils at 100C, so the highest possible temp you can get in contact with the food is 100C. Oil doesn't boil at that low a temp so it does a much better job of heat transfer.

You need to hit the books anon. I suggest starting with the section on heat transfer in Modernist Cuisine.

>but you're never going to put a skillet in an oven

Maybe if you're some pleb who only cooks really basic shit. But it's very common to sear food in the pan and then transfer to the oven to finish cooking. Or to finish foods under the broiler.
>>
>>8199845
you dont want to do that to a non stick pan
>>
>>8196831
basically this
however, if the food is fatty enough, you won't need oil
