Oil isn't just for non-stick properties. It fills the tiny gaps between the food and the surface of the pan thereby ensuring proper heat transfer to the food. Cooking in a pan without oil is going to generate crappy results. If you want to cook oil-free then you shouldn't be using the pan at all. If you want to go oil-less then use a grill, broiler, or roast in the oven.

Juices from food don't work as well for this purpose as oil does. Juices in the food are aqueous. Water boils at 100C, so the highest possible temp you can get in contact with the food is 100C. Oil doesn't boil at that low a temp so it does a much better job of heat transfer.
