I'm a big fan of Greek food. I think it gets looked down on because it never developed a fine cuisine on the level of Turkish, Italian and French. You don't get a lot of technique driven dishes without a history of royal court cuisine. If your climate is good you end up with ingredient driven dishes, much like Italian farmhouse cooking.
If you can get good ingredients I actually prefer ingredient driven cuisine to technique driven. I'd rather have fish pulled out of the ocean an hour ago and grilled simply with lemon juice and herbs than an elaborate French scallop preparation. Any fucking day.
Where Greek food starts to fall apart is when you don't have the greatest ingredients to begin with, because it's such an ingredient driven cuisine.

Don't be an idiot. Turkish most definitely has a fast/street food culture, but you can't ignore the fine food side of the cuisine. The fancy dishes that date back to the Ottoman court were highly celebrated and influenced the rest of Europe and even Scandinavia. The cooking style influenced by this history is high end and fucking excellent.

Try going to a high end Turkish restaurant or hanging out with rich Turks and going to one of their parties. I don't speak the language so I can't name the dishes. But it sure as fuck isn'r the same as their street food.

I used to work in a restaurant where we had feta as one of our ingredients that could be added to our pizzas, salads, or hoagies. Prepping it was shit because you just have this 3lb block of disgusting feta and the stench is awful. Even wearing gloves it would get all over your hands and you would just smell like the human embodiment of toe cheese all day. I have no idea how people can stand to eat it in large quantities.
