What's the best way to prepare crab sticks?

They're also pretty good in fried noodles. I mostly just like them straight as a cold snack though.

Fry them. If they're not wet already from the packaging, dip them in water then shake excess water off and roll in seasoned frying starch (potato or corn is best but any will do). Wait for the starch to hydrate and roll it a second time then into the fryer it goes. When golden, take out, wick on paper and consume your crunchy deliciousness.

outside of cheap rolls and maybe a pasta salad, I don't think they need preparation. Just take out of the package and eat, if you must dip them, a melted butter is nice, or a spicy mayonnaise.

On the topic of imitation crab meat... why does this stuff vary so much? It ranges from excellent, juicy and tasty, to downright gross, either dry or very fishy and gamey. Seems to be a gamble every time, on a product I would expect to be remarkably consistent. What gives? Is it all about the brand?

Yes, it's just like tea. On the one hand you've got good quality blended tea like PG Tips, and on the other hand you've got trash blended tea like Lipton.

Neither are the same as quality loose leaf pure tea (actual crab meat), but fuck if a cup of PG Tips (imitation crab) isn't lovely all the same.

Crabsticks cut into smaller pieces are pretty good in stir-fries, flavor goes good with oyster sauce.

Surimi is fish paste. I'm assuming the filename is because crab sticks are surimi extruded through a machine much like pasta is dough extruded through a machine.
