Eurofag here, Around here Cheese croquettes are a popular appetiser/snack. It's basically a very thick cheesy sauce, set in the fridge, then breadcrumbed and deepfried. So you have a gooey center in a crunchy jacket.

I ate one of these badboys in Greece with feta cheese used for the cheese-mixture filling and it was INSANELY good. A good feta cheese has an acid STRONG flavor. Your store-bought cheap feta is like store-bought cheap normal cheese, not ripened enough so they can sell it cheaper and thusly with less flavor.

Check your labels. There's sheep milk feta and cow milk "feta" and really, though the latter is yummy fresh salty briney good for a lot of dishes, it is absolutely missing that extra gamey FUNK of sheep milk and really shouldn't be called feta. Imagine the different from goat's milk vs cow's milk, you would not mistake chevre from cream cheese, right? Sheep's milk is about halfway in the middle of funk level.
