not an omelette, but lately Ive been buying fresh ground chorizo from Whole Foods and scrambling it up with the eggs, and some red peppers and onions. Fucking delicious. One day I'll get my shit together and make a proper omelette with sour cream.

salt cod omelet using canned salmon you salted yourself. adding a little skim milk to your omelette. finish cooking omelet in the oven at 425 in a convection oven, mix onion juice, ham water and raw eggs in a glass for a minimal postmodern omelet.
6 eggs. dash of cream. salt and pepper and maybe a dash of whatever herb is lying around. i like chives. mix it all up. chuck in a small handful of cheese.
fry up some onions and bacon and chorizo seperately. chop it all up and mix it in the omlette mix.
pour into pan. cook on cooktop a bit on med heat, then under the grill for a bit, then alternate up and down till its cooked.
i like to start with the chorizo because it releases all the fat into the pan and i cook the onion and bacon in that.
thats usually my weekend breakfast with coffee. nom.

My great-grandma made an omelette in the oven topped with a bechamel sauce and shrimp/crayfish tails.
Red onion, bacon, tomato and mushroom with cheese.
Egg ofcourse. Add shallots too.

Tarragon is my secret. Eggs are pretty heavy and it just lightens the whole dish up.

They're meaty. It's all fat and protein.
avocado, cheddar cheese, ham.
Goat cheese, sautéed yellow onion, mushrooms, peppers if I have them.
Or sliced lunch meat (ham, turkey, etc) or cooked bacon, cheddar cheese, diced fresh tomoatos.
