There is a shitload of horseraddish growing in my garden. I just harvested 1/8 of it and the roots are about 1kilo
Sooo..what can i do with this stuff?

I freeze it and it stays strong.
I use a bit in every soup I make. It enhances flavor without being identifiable as horseradish.
Blend it with green food colouring and sell it as wasabi. No one will know.

coctail sauce, spicy mustard, pretty much anything you want to add some heat to, just use it sparingly so you don't overpower the other flavors
