Sure, they can be eaten raw. But, all mushrooms are healthier when eaten cooked. Nutritionally-wise, mushrooms are better eaten cooked because it breaks down their thick cellular walls and makes their amino acids and other nutrients more available for your absorption. Raw, your digestive system will take too long to break them down, and you'll lose those nutrients. Also, champignons have a very mild toxicity (not enough to hurt you) and heat breaks the toxicity down.
