I love granola (homemade, store bought stuff is mostly garbage) but it's not overly healthy.
For oatmeal I usually do steel cut oats in a slow cooker with milk and water (I like about a 20/80 mix), some cinnamon, a little brown sugar, and roughly diced apples and/or chopped up raisins.

In a sauce pan, 1:2 water ratio (40g oats:80ml water) for the right firmness, six minutes.
Add milk after they're done cooking (while hot) so they get a nice coating while the grains remain firm and chewy.
