I trim that layer off. Pounded down to an even thickness. Marinade overnight with salt, black pepper, cilantro, lime, cumin, onion and a touch of vegetable oil.

About 1/4 cup of reserve marinade, 1/4 beef stock and a couple cloves of crushed whole garlic cloves; Slow clooked for between 4-7 hours. It's probably too damn tender to do this, but, throw on a stupid hot grill for color, and the marinade flares up and completes the flavor profile. Tear or cut depending how you like to serve it.

I haven't had that much hot lady tongue action since college.
