Locally sourced heavy cream in stand mixer for 12 minutes and I've got butter and buttermilk. Really different - almost like a soft cheese.

I rinsed in really cold water, put it in a quart freezer bag and flattened it out.

There's still way too much water in that. Needs more straining and maybe beating against a board.
