I've had literal fruit sandwiches as part of a tea service. Thin brioche bread slices spread with whipped butter and filled with variously coloured semi-soft sliced fruits. Strawberries. Orange mango (gir kesar). Carambola. Kiwifruits. And violets.

Well known sandwich in Florida, the Elena Ruth, is a cuban garlicbutter toasted/pressed bread serrano ham sandwich that contains a layer of guava or strawberry jam for sweetness and cream cheese.
I love a thick jam with funky cheese, such as blue cheese or brie cheese, esp with a ham or roast beef sandwich. Favorite jams are figs, apricots, strawberry-rhubarb. Any sandwich with aged or smoked cheese, like ny cheddar-apple or pear. Of course fruit or dried fruit in a chicken salad is amazing, whether apple or grapes, or cranberries.
Sweetness does work, the hint of the monte cristo sweetness in the french toast batter, and raspberry jam on the side.
