Sherry is fucking GOAT, and way underpriced due to being off-trend currently. Just make sure you buy good stuff- it's cheap enough that that's reasonable, but you may have to look around.
And make sure you go for the kind you actually want:
Fino and manzanilla are light, acidic, and saline, and pair well with a LOT of foods.
Amontillado is dry and nutty, savory, and light.
Palo cortado and oloroso are dry, rich, and nutty/toasty. Aged oloroso is incredible, by the way.
Pedro Ximenez is rich, sweet, and raisiny, with molasses and coffee flavors. Again, aged PX sherry is pretty magical.
If you can, try to go for VORS sherry, this indicates a high minimum age.
