Bought half a gallon of pure grape juice, not from concentrate omfg, and add a few cups of sugar and some hard wine yeast.
Oechle-meter says 105, so I put on the air lock and now it's gonna be a few weeks of wait. Omfg, this is so exciting every time I start a new brew.

I do mead, wine and beer so familiar with process. How do you brew ginger beer? I've put ginger in mead before, but never made beer with it.

Well you can just use a ginger bug, or really any yeast really, i've used champagne yeast a lot, using apple yeast currently.

From there, just boil a pound of ginger per gallon (you can play around with this number), and then add however much sugar you want depending on the abv you want. If you calculate it so that it's just like .02% alcohol or .2% i forget whcih yoou can immediately bottle and get a nice dry soda.
