I think the key is to use very small amount of yeast and do 24 hour rise in refrigerator. I use a small amount of sourdough starter and "00" flour which is also critical. You can find it in Italian markets. Also heat your oven with stone in for at least 1 hour before at highest bake setting. It comes out pretty close.

I use a wood burning oven when I've got guests and it's definitely better, but the oven when heated properly works well too.
