Check out vinegar-based slaw recipes. They are usually variations on apple cider/red wine/peppers and sugar.

An asian dressing perhaps? Something with rice vinegar, mirin, soy sauce, lime juice, sesame oil, honey, red pepper/kochukaru.
How to make Coleslaw. You rotationally cut off cabbage from a head with a cooks knife. So you end up with inch to 2 inch diced cabbage. You find dice cooking onion at around 1 tbsp to one cup of cabbage, then you squeeze in lemon, pour in vinegar and put in real mayo to taste. then 4 types of pepper.
