This is the recipe I use, I read online different ideas and just adapted them to my liking.
1kg minced beef/hamburger (2.2lbs)
2 Onions, diced
6 cloves garlic, minced
6 small red chilli peppers, diced (i used dry) seeds and all
1 small carrot, grated
1 stick of celery, grated
1x 700g jar of Passata
4tbsp tomato paste/concentrate
1/2 cup red wine
1tsp dried parsley
1tsp dried oregano
1tsp dried thyme
2tsp dried basil
2tsp cracked black pepper
1/2 tsp Msg (optional, but awesome)
1tsp brown sugar
Salt to taste
You could simmer it slowly in a pot for a couple of hours but I was in a hurry so cooked it for 30 mins in the pressure cooker.
Brown the meat in batches first then sweat down the onions/garlic/chilli then just chuck everything else in and let it do it's thang
Served with plain old basketti topped with grated cheddar and of course parmesan cheese

Are there any good ways to drain water out of the pot without a colander? I'm usually able to pour most of it out without spilling any pasta, but there's always just enough at the bottom that causes the sauce to get watered down ever so slightly when I mix it all together...

drop all the passata and tomato concentrate.
sear the meat with all the spice and condiment, then add the whine, let it reduce slightly, then simply throw in an equal measure of chopped tomatoes, and let it simmer, much better sauce.
Also, sweat the onions and garlic first, then add the meat, so the aetheric aroma of onion and garlic goes straight into the meat, and not in the sauce- that gets the flavour from the meat releasing juice and spice in equal measure.
