I have a bunch of chicken hearts and gizzards. How do I cook these without bathing them in butter or breading them but also make them good enough for pleb tastes? I have too much for myself so I figured I'd subject my family to them next week.

Recipes just confuse me. Should I marinate them, fry them a little then grill them? Most are just drowning them in butter. I'm a lazy cook but I'm going to split what I have up and try different methods.

Marinate, skewer, and grill them, low heat. I use a weber black peppercorn seasoning packet

I usually fry mine in ghee/butter/evoo with garlic, onions, mushrooms and different herbs.
