i haven't been fishing since i moved to the west coast and they don't seem to be very popular out here. seen the spread/salad stuff a few times in cold cases but never whitefish or smoked whitefish. i guess i'll have to get my ass out there myself eventually and find some whitefish for smoking and walleye for other purposes.

It's always over-dried. Now if you are fishing, it's really easy to make yourself. Just pile it with salt for a day and then, hang it somewhere rain-proof outdoors.

Dried anchovies are traditionally made into a dish called 'sambol ikan bilis' with onions and peanuts in Indonesia, Singapore and Malaysia.
I also used to live in the North Solomon Islands where drying and smoking fish was a traditional prep method. To this day I can remember the smell and taste of their smoked fish- it wasn't great.
