Banana sponge.
Just make a normal vanilla sponge mix but crush up some over ripe bananas into the mix.
This adds a lot of extra moisture to the mix though so it will take a little longer to cook.

Surely the question is which cakes *aren't* perfectly good the day after? Because most cakes will certainly last a day and many (christmas and birthday cakes) seem to last fucking years!

Tres leches, lemon drizzle carrot or something else with high moisture always tastes fine or even better. Anything is fine really if you manage to put enough fat and hydration into it. If you don't mind something different, almond flour cake stays moist forever.
Orange and almond spice cake. Stays moist for days.

Soaked cakes are a good choice, like dulce de leche. I also think cheesecakes and soufflé cheesecakes work well.
