Why do I always hear stuff like Filipino being the next best food thing. Do they actually have a cuisine that can be considered a meme?
No. Filipinos, every single one, are delusional narcissists that aren't actually talented in any way other than how narcissistic they are. This includes their cooking.
I don't think it'll ever really catch on. You'll see a restaurant pop up here and there, but flip food is not terribly exciting. It's basically boiled meat with rice.
There are worse cuisines out there, though.
For me it's the Phillipino style carbonara, the best meal you can get.

My wife's from the Phillipines.
Their food is fucking awful. Seriously, apart from one desert called Leche Flan, which is like a super cholesterol creme caramel which is delicious, its all greasy, fatty slop.
I've been to the Philippines several times, mainly Manilla but occasionally Tarlac and Angeles City, their cooking is shit. Fried gristle.
However,
Their fast food is God-tier though. KFC with rice is the best KFC I've ever had. They have a restaurant chain called something like Jollybe that's really great.

There are a few flip dishes that are tasty; but most are just meh to terrible. Pancit, lumpia and adobo are good. Longanisa sausages are sweet little juicy of candied pork. The roasted suckling pig is fucking delicious.
The shit dish where they basically boil fish in vinegar is god awful.
It is a mixed bag really. Nothing that stellar for me but the shit that is bad really stands out as being horrible.

You know, in the past couple hundred of years, most cultures have wound up with a cuisine that is at least decent, with at least a couple of great recipes.
The Philippines are no exception. If Vietnamese food can become popular with the majority of Americans only knowing about pho and MAYBE bun I assume flip food could do the same.
