Which cut of porkchop is best?
I prefer at least an inch thick.

I like thick most of the time, bone-in, on the grill.
But, sometimes there's deliciousness in thinly sliced chops, such that you get 2 per serving, and lots of browned stickiness on both sides, especially if you cornmeal dust it, that could burn if you cooked them longer.

i like it thick usually. maybe 1.5
but if i want to do something great with pork, im using the tenderloin mostly. its much easier to work with, in the sense of working it with other ingredients

Bone in with a good amount of fat.
Lean, boneless pork is shit.
