Naw but seriously the real thing is that's all Sardines taste like, just the brine. There's not much to do with them you couldn't do with salt. The flavour doesn't really go with anything.

I even enjoy them on pizza too... the brine goes well with cheese, obviously.

I cook pasta, fry some onions and chili in a the pot I have cooked the pasta in until they are brown. Sometimes I deglaze with vinegar, sometimes with wine. I put the pasta back in and stir until all is warm, then I put in the sardines and season it with pepper, salt and dried or fresh parsley.

Dried tomato are also a big plus.

I usually make it as a dip for soft-boiled eggs w/ soldiers.

Make soft-boiled eggs (oeuf a la coque, I'm not bragging with fancy terms, I'm French and that's we call it, doesn't seem to have a proper equivalent in English).

Prepare some "soldiers", take some bread, toast it, then you cut it in strips thin enough to be dipped into the egg.

Take the sardines, chop them up roughly. Add chopped shallots or onions, parsley, eventually a yolk, and some bread (the soft white part, enough to make it not too soggy). I had some chopped chili to spice up the whole deal, eventually some curry if that's your thing.
Cook this mixture in a pan with the sardine oil until it looks like a thick dip. Don't be surprised, it will look terrible, but that's alright.

Open the top of your soft-boiled egg, high enough so that you can see the runny yolk. Add some salt. Take your soldier, slather it with the sardine mixture. Dip the soldier into the egg and enjoy.

Usually, I make three eggs for one person, and toast the bread as long as I eat it for a fulfilling meal.
