Doritos chicken casserole:
>meat from one shredded rotisserie chicken
>half a large chopped white onion
>one can red enchilada sauce
>one can cream of chicken soup
>one can cream of mushroom soup
Mix all ingredients together in a large bowl. Layer in a casserole dish with shredded jack cheese and crushed Doritos, topping with whole Doritos and cheese
Bake at 350F until heated through, about 30min. Serve with rice.
I won't pretend it's not trashy but it's so good.
