In the UK at least there seems to have been a surge in it. You only used to get Jack Daniels (yes I know it isn't technically a bourbon) and Jim Beam white in the supermarkets but now we get all sorts.

I think the rise in the popularity of cocktails has something to do with it, as I don't know many people who drink it by itself. Or it could just be a change in attitudes for whatever reason like the recent surge in craft beer and gin over the past couple of years.

I really like Bulleit and Buffalo Trace, they are quite cheap too so a good place to start.

If you want decent bourbon, Bulleit and Buffalo Trace are sure winners. I hear good things about Elijah Craig as a budget bourbon, but I can't get it where I live so I can't vouch for it. If you're destitute, Jim Beam is acceptable.

Scotch is one of those ones where you'll need to shop around and find one that you personally like. My personal recommendation is Laphroaig 10yo, but some people find islay whisky to not quite be their thing. Try a highland whisky like Glenfiddich or Glenmorangie and move from there.

talisker 10 is a nice entry into peaty, islay scotch,
laphroaigs 18/21/quarter cask is beautiful too. I've had the quarter cask that was aged in sherry casks and that was stunning, a bit sweeter than the 18/21 but still amazing.

Ardbeg is kinda overrated.

You should probably start out with rye whisky to get used to intensity of alcohol. Speysides are pretty soft though so it shouldn't be too bad. Probably better off buying a 375ml bottle of Glenlivet or Glenfiddich 12 to get the idea of the spirit and basic oak tones. Speysides to look into after would be Balvenie Doublewood and Dalwhinnie 15, both are great entry level speysides.

True, for the most part. UNOPENED spirits are durable when well-stored. When you open a bottle, the oxidation process starts which can cause whisky to go bad, but slowly. Even stored optimally (in a cool, dark place with well-regulated temperature) opened bottles will eventually change for the worse.

I have an opened bottle of Supernova 2010 that still tastes pretty decently five years after I bought it, while I had to dump quite a bit of a Bunnahabhain in the drain (just the 12 year, thank goodness) because it was undrinkable after a year of being open.

I know some brands advertise that that they use champagne barrels or something for aging their product so i want to know, would aging something in the barrel i used to make vanilla extract be something worth trying or would it just ruin the alcohol?

Some of the notes in whiskey come from how the wood has been treated. I know the sugars in the oak wood inside untreated barrels provide the vanilla notes while charred barrels provide the caramel note.

I don't distill or age spirits, so sure someones going to jump in an correct me, but if you've already made vanilla extract, natural or not, your going to be branching into liqueur territory as the vanilla profile that has seeped into the barrel will seep now into the alcohol. My info comes from the 90-100 something page book 'Kentucky Bourbon Whiskey An American Heritage by Michael R Veach'

Obviously if the barrel is reused then it has had the sugar's leached from it already, so fresh wood is the best. Some of the unique flavours in whiskey no doubt come from the supply of wood. Whether that wood is aged or not before it's used in barrels is again another question.

A few years ago there were big announcements about it being discontinued, then it was to be brought back as a "limited time offering" - now when you visit their website it's still mentioned on their main spread as being "here to stay". Brought back yamazki 12 and hibiki 17 from Japan years ago. Yamazki 12 used to cost as much as a beer there. They were both great. Hibiki 17 was the best blend I've ever had. Yamazki 12 was as good as any similarly priced and even more expensive scotches.
The harmony stuff is just them trying to push product to deal with the demand spike now that the world knows Japan makes awesome scotch. There are options that cost half as much that are better.
