Why does anybody eat runny yolk in their fried eggs?
I'll make it easy for you.
Because people fucking feel like it. Same goes for boiled eggs.

Raw egg is a pretty common ingredient in a lot of places. As long as the eggs are washed before being cracked it's perfectly safe, since the bacteria from raw eggs is on the shell, not the insides. In most countries other than the U.S. there are stricter health regulation on eggs making it necessary for them to be cleaned before being sold, but in the U.S. there are no such regulations, which is why we don't use raw egg in our meals.
I like raw eggs in soup, but Is much prefer to just suck the juices out of the delicious raw eggs.

That is literally the opposite of what is true.
Eggs in the US have to be refrigerated because they ARE washed. Unwashed eggs don't have to be refrigerated.
Eggs are pretty much always safe to eat raw, plus the eggs in the dish are cooked by the liquid.
