Try it in a chicken wrap. As far as flavor goes, dandelion is much stronger than most other greens, so it's great as the single vegetable in a simple combination.

Endive is part if the cichorium (CI in Italian being pronounced as CHI in English, hence the word 'chicory') family of vegetables.
In English, this type of endive is often called frisée, curly or Dutch endive.

Hearkening to its Dutch origin, use it to make stamppot. There are many recipes. Some Dutch may get pissy about the technique I use to make mine because I blanch the endive and sauté it in butter with onions before adding boiled potatoes and a bit of milk or cream and mashing the lot together.
Traditionally, the endive is raw and the onions are cooked in bacon grease rather than (or in conjunction with) butter. This is the bit that makes Dutch people lose their shit at me.
It's great served with smoked sausage or ham.

Good, I was worried the endive would end up more bitter than it actually was. Beets could've been cooked for longer though.
