Not my favorite but something I recently made.

Marinate Catfish fillets in some soy sauce and togarashi
Fry bacon until fat renders
Add in onions/garlic and saute until browned
Blend up some red grapes into a coarse paste
Add grape paste/dijon mustard/sherry vinegar/ chopped thyme to bacon/onion/garlic
Simmer for 10 minutes or so, keep warm
Heat up butter and olive oil on high on a cast iron
add Catfish fillets, cook 3-4 mins on each side, I prefer the outside slightly blackened, remove from heat
Catfish on plate, vinaigrette on catfish, add thyme/grapes for garnish

This is an Edward Lee recipe besides the added marinating part which I liked over just salt and pepper

Heat up sauce, cook french bread until it becomes nice and crispy on outside while soft on the inside(or don't cook it if you prefer), pour sauce over bread after cutting it into 4ths, add whatever.
Easy and it fills you up for a day.

Cook chicken
take uncooked broccoli
put half of cooked chicken in oven safe pan
put all of broccoli on top of chicken
take can of Cream of Broccoli, or Cream of Chicken soup
empty can over chicken and broccoli
add 1/3 the cream of whatever can full of milk
add remaining chicken
cover in breadcrumbs and Mozzarella/cheddar cheese (I prefer mozza, but cheddar gives it a better look)
bake at 350 for like 20 minutes
