Curry is the wrong choice. Elk tastes fucking delicious. Don't mask it, marinate it in mild flavors, and then grill that shit. Elk can be a bit on the tough side, so be gentle.
Alternatively you could grind it up and make burgers. Mixing in a small amount of pork will add some fat and make your burger a bit juicier and easier to cook. I personally like straight elk burger, but it isn't for every one.

You can do a lot of things with it, for istance you can take a couple of pounds of it and mince it. Then make your favourite ground meat dish with it.

This is all you can see from that picture and even this has a large chunk out of focus.
Salt, pepper and cook it medium rare, keep it simple with delicious meat like elk. Id say sautee sum mushrooms in butter, with a little thyme, oregano and parsley and put that shit on top of the elk.
