I use mine to blanch veg and prepare any root veg I intend to serve buttered (parsnips, carrots, potatoes etc) or with Sri Lankan style quick curry (which is similar to buttered veg, but using coconut cream instead of butter and adding black curry powder).

Lemon juice is very acidic as far as foods go. What they mean is the influence of food on blood pH. Like proteins lower blood pH after digestion and absorption as amino acids.
