I like to use it in a sauce for gnocchi (any other smallish dense pasta will work as well).

Method: cook pancetta in olive oil until crispy, add minced shallot, garlic, cook until soft and translucent, add wine, reduce, add a big spoonful of sour cream and a bit 1/2&1/2, or cream, creme fraiche, and gorg and reduce until thickened. If using frozen peas, put them in with the gnocchi, if fresh, blanch and put in prior to gnocchi/pasta.
