What's the secret to a great quiche?

Making sure to remove as much of the liquid from the spinach as possibly so it doesn't water the quiche down.

Also, a nice flaky crust. You can have the greatest quiche filling but if the crust is soggy or raw, you could ruin the whole thing.

I get a nice crust with glass pyrex, and almost never in my metal pans. Dunno why! But, that's what I do.
