For my spices I ground up some. koriander and mustars seeds and added fenugreek as well as some cumin

Once ma meat is brown and most the liquid is gone I turn it down to medium high

After onions are translucent add the paprika and cover

That's not brown. That's gray. You boiled the meat in its own juices, you didn't brown it at all. Probably because your heat was too low. There should be no liquid in the pan at this point, except for a little oil.

You want what's on the right side of this picture, not the left.

Meanwhile I mixed a bit of tomatoe paste with water, maybe 100ml to add with the tomatoes

add tomatoes and tomato paste, cover and let it sit on medium heat for a good 10min, also added salt, pepper, the spice mix and some. fresh thymian
