Use however much you can for quiches/baking/pasta- freeze what you don't use, all freeze pretty well- and then take whatever eggs you have left, separate them, and freeze the yolks and whites separately, in portions of 2 or 3 whites/yolks so you don't have to defrost the whole lot. You can freeze eggs raw in an icecube tray, either as-is, or you can separate them and freeze yolks/whites separately.
