will adding a small amount of lemon juice to my bread make for a better loaf? i hear the vitamin C in it can do the gluten some good, but that it can also fuck it in large quantities, and kill the yeast. if i should add it, how much should i add, and when in the baking process should i add it?

Having a nice slack dough is great for more a more airy crumb. Bump your hydration up a little and make sure you have steam in your oven when you bake so that you can maximize your oven spring. Wet dough with an autolyse and the stretch and fold method is always great.
