didnt see one, so making one

will adding a small amount of lemon juice to my bread make for a better loaf? i hear the vitamin C in it can do the gluten some good, but that it can also fuck it in large quantities, and kill the yeast. if i should add it, how much should i add, and when in the baking process should i add it?

No

focus on improving your bread through method instead of additional ingredients.

but every store bought loaf contains vitamin C as a rising agent
>>
>>7952142
You don't bake bread to make bread that you could buy at the store.
>>
>>7952335
fair point senpai, i just want a nice, airy spelt loaf, but getting one has proven challenging thus far
>>
>>7952380
Having a nice slack dough is great for more a more airy crumb. Bump your hydration up a little and make sure you have steam in your oven when you bake so that you can maximize your oven spring. Wet dough with an autolyse and the stretch and fold method is always great.

It's good for cakes because it provides additional acid for the baking powder to react with. But the powder should contain sufficient powdered acids already unless you're using pure bicarbonate. And you don't use baking powder for making bread.

Also, you're an idiot.

also
>not knowing about the wordfilters
>>
>>7954556
EVERYBODY knows about the wordfilters.

But people avoid filtered words unless they're attention whores.

And the word filtered to that is F A M, which wouldn't make sense there.

So apparently: Attention whore.
