Depends on what I'm in the mood for. My top three are:

Digesting food more quickly is what causes blood sugar spikes though. That's why white bread causes more of a spike than whole grain bread. White sugar causes more of a spike than a piece of fruit. So foods that take longer to digest don't do that.

Anyway, I usually just have leftovers for breakfast, but my favorite is the breakfast sampler from IHOP with harvest grain pancakes. Honey instead of maple syrup. It takes too long for me to make everything that it comes with so I never make a big breakfast at home.
