You can, but it won't taste as good as it otherwise would. Red/purple onions are usually very mild. They are typically eaten raw in salads or the like. When cooking onions you want the white or yellow. Ideally yellow.

OP, there's a pH thing where red onion dye changes colors, attractively vs unattractively. That is the only reason people don't use them more in recipes like this soup, because their flavor is indeed strong and biting! Using a sweet onion in french onion gets cloyingly sweet as they cook down.

Of course they are. Sweet onions are a totally different thing altogether, which is why I never mentioned sweet onions in my post.
Normal onions: Yellow > white > Red
I wasn't talking about sweet onions at all since they have no place in this.

Google is your friend. Several recipes using purple/red onions for onion soup are listed. I'd use red wine and strong cheese for the cheese toasts.
Onions are cheap. Just try it out and see. I've done it before and didn't notice much difference, though I use yellow onions now.
