stewed? I was considering steaming the chicken to see if it came out moisture. Only problem with steaming is that it comes out white which doesn't look good, so maybe would then throw it in a pan for a few minutes.

Here is what it looks like after in the steamer when I throw it in a pan (was testing this the other day - pic related). Just doesn't look too hot, but after being in the pan for a bit it looks and tastes grilled so might as well just use the grill I figured. In the pan just added some olive oil and season salt.

This is probably going to sound like a non-answer but it depends the establishment. Most taqueros specialize in a couple of meats. So I choose based on their specialty. It is a rookie mistake imo to go to a place that specializes in adobada and choose cabeza. Just setting yourself up for disapointment.

I understand that they sell different types of fillings. However, they usually specialize in one or two, with the rest being there to give people choices. I agree that 1 place can be good at several fillings. However, when you want a specialty filling such as Al pastor, adobada, carnitas, suadero, lengua, cabeza, etc. I would only get it if they specialize in that filling. If i am trying a new place that I havent researched my go to order is asada and chorizo. These two fillings are hard to fuck up, but very difficult to get good. Sometimes I will ask the taquero, if he says everything is good then ill ask for just asada and chorizo. If he actually tells me we specialize in cabeza then ill try the cabeza.

The biggest mistake people make imo is not asking the guy what is their specialty. Or another question i ask is what do you sell the most. If its asada then it just might be that its a typical taqueria that has lots of american patrons. Also, look for the vertical spit.

Aguachile is probably my most favorite mexican dish. So simple but so fucking good. There's two places locally that make really good aguachile; one adds either oranges or mangoes to theirs (in addition to the usual ingredients) which tastes fantastic; the other place makes a more traditionally basic aguachile, but their sauce is the fucking BEST. Either one, I'll eat it all.

The Mexican population in NYC is pretty new, and is from all over Mexico. I had cooks from Mexico city look at me like I was crazy when I refried beans. The white population here doesn't have much of a taste for real Mexican food (they prefer Chipotle and don't like spicy for the most part). So restaurants with any regional twist can't find enough customers.

It's getting better, but seems to just be the same asada/carnitas/lengua tacos that anything bigger than a truck has to do to appeal to enough people. Which sucks, because I'd kill for real Sonoran tortillas at this point.

There's a small chain of Mexican restaurants by me called "Green Cactus", I'm guessing it's not owned by Mexicans but their tacos are made in an authentic fashion for the most part, so I still like if. I also can't tell if the workers are actually Mexican or Central American.

It's the closest thing to real Mexican food near me so I like it, it's pretty tasty.

This looks so fucking good. Everything in this thread looks so good. There's a place in tallahassee that serves what I think is the closest thing to real mexican food I've had but it did not look like this.

I'm Mexican. I've had authentic and homecooked food from where my parents live in Toluca, as well as a lot of the more regional foods in LA. I really think it's overrated.

Not only that, but it's generally incredibly unhealthy to eat on a regular basis, and among the reasons that Mexico has the highest adult obesity rates. (America, eat your heart out. You've been dethroned.) Though that's not entirely the fault of Mexicans, since the entire cuisine has been Paula Deen'd over the years.

That being said, eating my mom's mole or pozole still triggers comforting childhood memories, so it still hits a sweet spot for me every now and then. I still try to get more variety in my diet, and I tend to enjoy other kinds of food more nowadays.

Inb4 a bunch of angry beaners rag on me for this post. Search your hearts and stop being so fucking haughty about your own culture. Modesty never killed anyone. (This is another problem with Mexicans; everyone's so stubborn and full of pride, but that could be a discussion for another day entirely.) Anyway, those are my two cents.

These bad things happened when the US rubbed its dirty hands all over Mexico, and I don't necessarily thirst for the same to happen to the US in turn. Cultures each have their strong points that should be cherished, which is why I do feel remorse seeing other Mexicans acting the way they do sometimes. Almost none of my extended family in Mexico like trying non-Mexican food, and I think that's a shame is all.
